Authentic Jamaican Escoveitch Snapper and Bammy Recipe

Escoveitch Snapper is a staple in Jamaican cuisine. The tangy, spicy flavors of the fish are complemented by the crispy texture of bammy. Here’s how you can prepare this dish with authentic Jamaican spices that will elevate your cooking!

Ingredients:
⦁    2 whole snapper fish (cleaned and scaled)
⦁    1 tsp Fish and Seafood Spice
⦁    1 tbsp garlic, minced
⦁    1 tbsp vinegar
⦁    1 tbsp sugar

⦁    1 onion, thinly sliced
⦁    1 carrot, julienned
⦁    1 scotch bonnet pepper, sliced
⦁    1 bell pepper, sliced
⦁    2 sprigs thyme
⦁    1 tsp salt
⦁    2 bammy (cassava bread)
⦁    1 lime for cleaning the fish
Instructions:
⦁    Clean the fish with lime juice and water. Season the fish with Fish and Seafood Spice            and salt.
⦁    Heat oil in a frying pan and fry the fish until golden brown on both sides.
⦁    In another pan, heat some oil and sauté the garlic, onions, carrots, bell peppers, scotch        bonnet, and thyme. Add vinegar, sugar, and a pinch of salt. Let it cook for about five          minutes.
⦁    Serve the fish with a generous portion of the escoveitch sauce on top.
⦁    Warm the bammy in a little oil and serve it on the side.
